Ice Wine











Originating in Germany as Eiswein, Ice wine is now the pride of the Canadian wine industry. Ice wine is made by leaving the grapes on the vine until the temperatures drop to –8°C (17F) or colder while the grapes are harvested and crushed. Each grape provides one tiny drop of ice wine. By leaving the grapes on the vine the grapes continue to develop their aromas and flavours creating an extremely sweet, smooth uxorious wine. It can be paired with custard based desserts, a plate of really strong aged cheeses, nuts and dried fruits or on it’s own can be dessert in a glass. There are 3 main grapes used for ice wine:












 













Riesling:


It’s acidity is the perfect balance for the intense sweetness of ice wine and it’s mineral flavours add interesting complexity as the wine ages.


Vidal:


it is chosen as an ice wine grape because of it’s remarkable hardiness against the elements, which is vital for the grapes to survive until their harvest.













Cabernet Franc:Red Ice wine is a rare and real treat. The grape is hardy but struggles to survive through the cold winter        temperatures. With intense berry flavours, cabernet ice wine is an experience.
